Our most recent competition coffee! Miles Hanks has competed at the 2020 Canadian National Barista Championship earlier this year with this coffee. Bugoyi Washing Station is located in the Western Province of Rwanda - near the border of the Democratic Republic of Congo and directly on the shores of the Lake Kivu. This coffee has been fermented in clay jars with fruit alcohol for 72 hours. Though technically all fermentation is anaerobic, this form of processing allows for an increased retention of carbon dioxide and a limited interaction with oxygen that creates much more pronounced fruit flavors and develops coffees with thick and syrupy bodies.
